Ramblings with Rin


It's National Mojito Day! I love a good mojito; they are refreshing, delicious and you can jazz them up with so many different flavors. Since it's a million degrees outside, I've been craving mojitos almost weekly, so obviously, I was very excited for National Mojito Day. I decided to whip up a blueberry mojito to celebrate! 



What You Need: 
  • 1 cup of blueberries 
  • 10 mint leaves 
  • 2 tsp of honey (or sugar)
  • 6 oz of club soda 
  • Juice of 2 limes 
  • 4 oz of rum 
Directions:
  1. Muddle blueberries and set aside 
  2. Muddle mint leaves and honey in cocktail shaker 
  3. Mix in blueberry mixture, rum and lime juice 
  4. Shake and pour over club soda and ice 
  5. Add garnish (berries, mint & lime) - if desired

With Memorial Day Weekend around the corner, I have been itching to try out some new recipes for the weekend. I found this recipe on Domino Magazine and couldn't wait to try! This cucumber salad is refreshing and perfect for any BBQ or party you will be attending.

When it comes to sipping on summertime drinks, margaritas are my go-to cocktail. I guess I can thank my Mexican heritage for my love of tequila! I was browsing for some beverage ideas for 4th of July (I ended up making this one) when I stumbled upon this delicious recipe for a strawberry jalapeño margarita this weekend and knew that I had to try it out! What is your favorite drink to shake up in the summer? 

Ingredients: 
  1. - 1½ oz. tequila
  2. - 1 oz. orange liqueur, such as Cointreau
  3. - ½ oz. agave nectar, or simple syrup
  4. - ¾ oz. fresh lime juice
  5. - 3 strawberries, sliced
  6. - 2 slices jalapeño
  7. - coarse sea salt for glasses


Directions: 
  1. Muddle the sliced strawberries, jalapeño and lime juice in a cocktail shaker. Add the tequila, orange liqueur, and agave nectar. Add ice and shake for a few seconds to mix everything together and to get the drink cold.
  2. Run a lime wedge along the edge of the glass. Dip into a plate of salt to coat the edge. Add ice and strain the margarita into the glass. Garnish with a jalapeño slice.

I'm not one that generally cooks. In fact, until recently, I pretty much lived off pasta and ramen {healthy diet I know}. I've been trying to expand my kitchen talents and decided to try this stuffed flank steak recipe! It was quite delicious {although I would cut back on the amount of spinach}. If I can manage to make this so can you!

Since I am still a few months away from turning 21, I thought I would share this delicious looking, non-alcoholic St. Patty's day drink! Few ingredients are required and it takes minutes to prepare! So for all you underage readers who still want to celebrate with a green drink, why don't you whip out your blender and start making this minty treat!

Since I spend a majority of my day sifting through the greatness of pinterest, I thought it was time I started using more of the recipes I find on there. Enter this recipe for crock pot fajitas. I was a little hesitant at first, but it seemed simple and looked delicious, so it was time to give it a go!

What You Need:
- 2lbs of Chicken Breast
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Onion
- 2 Tsp of Chili Powder
- 1 Tsp of Ground Cumin
- 1/4 Tsp of Salt
- 1/2 Cup of Chicken Broth

 Cut the bell peppers and onion in to thin slices. I cut the top off of the peppers, cut them in half, and then sliced them. With the onion, I cut the top and bottom off, cut it in half, and then sliced it. 
 Take your two pounds of chicken breasts and cut into small chunks. Cut off any visible fat.
In a separate bowl, mix the dry ingredients with the chicken broth. Throw the chicken, veggies, and broth mixture into the crock pot and cook on low for 6-7 hours or on high for 3-4. 
Enjoy! 
You can add cheese, salsa, sour cream, guacamole, or anything you desire! It's easy and yummy!

Mimi+Meg writes a monthly calendar filled with offbeat holidays and celebration that you will be sure to adopt. According to her August calendar, Monday was Zucchini day, so I thought I would finally make this oven baked zucchini chip recipe. I added 1/2 Tsp of paprika in mine, but it was a little too much flavor for the chips.


Ingredients:
- 3 Zucchinis
-1/2 cup of bread crumbs
- 1 Tsp of dried parsley
- 1 Tsp onion powder
-1 Tsp of garlic powder
- 1 Tsp of black pepper
- 2 egg whites

Instructions: 
Rinse off the zucchinis and cut thin, uniform slices. Set the slices on a paper towel to dry out excess moisture. In a separate bowl mix the dry ingredients together. In another bowl, mix together the egg white until frothy. Take the Zucchini and dip in the egg mixture and then in the dry ingridents. Set on a baking tray. Bake in the oven {450 degrees} for five minutes, turn over and bake for another seven minutes. Let cool down and enjoy with your favorite dipping sauce.

Yesterday, I was scouring Pinterest and came across this recipe for grilled pizza. Lucky for me, my younger sister had already planned on making pizza dough that day and agreed to leave some extra for me to grill my own personal pizza! The toppings are up to you, but I chose to make a "Margherita" Pizza. I used Bobby Flay's recipe as it was the easiest to follow! Hope you enjoy!


What You Need:
1 Store Bought Dough
Olive Oil
Salt and Ground Black Pepper
Fresh Mozzarella {ground or sliced}
1-3 Tomatoes Diced {depending on size of pizza}
Fresh Basil Leaves
Dried Oregano
Dried Basil 

 Before you begin prepping the pizza, turn the grill on so it can heat up {I used a gas grill}. Once the grill is hot, shape the dough into a 6-12" circle {mine was 6"}. Brush the top with olive oil and sprinkle with salt and pepper.  Put on the grill, oil side down until bottom is golden brown. Once cooked, drizzle olive oil on the top and flip over {using metal spatula}. Let it grill until golden brown. Take pizza off the grill and put toppings on {cheese, tomatoes, oregano, basil}. Put pizza back on grill for 3-4 minutes or until cheese is completely melted. Take off grill and add basil leaves.

 Slice and Enjoy!

Today's DIY post is food related. I first spotted these on Pinterest a few weeks ago and had been dying to make them. Not only because it involved two things I love {cookie dough and chocolate} but it was super easy.
Using this recipe make a batch of cookie dough {I replaced soy milk with regular}
Cover and let chill for one hour
 Roll the dough in 1 inch balls and place on a tray covered with freezer paper
Place the trays in the freezer and let freeze for 30 minutes
 Melt two cups of chocolate candy coating {either in the microwave or on the stove depends on page directions} 
 Dip the 1inch balls in the chocolate and make sure they are fully coated. Tap off the excess chocolate.
 Place them back on the trays and let chill for another 30 minutes.
 And Enjoy!

I am going to share a little secret with you guys: I am a dreadful cook. It's true; this girl can screw up Mac and Cheese from a box (and this is a fact). So, when I saw these Parmesan French fries here, I was a little hesitant to try them out. However, they just looked too yummy to not attempt. I found and easier recipe  here, and they were so easy that even a horrible cook like me didn't screw them up!


What you need: {3 potatoes, 1/4 cup of EVOO, 1/2 tsp of black pepper, 2tbsp of salt, 1/2 cup of grated Parmesan}


Set your oven to 400 degrees, and while waiting, wash and peel the three potatoes.


After they are peeled, cut them into half inch thick slices.


Then add a Tbsp of salt to a pot of water, add the fries, and bring to a gentle boil.


When they are 3/4 the way cooked drain them and put them in a large mixing bowl. Add the oil, pepper, and another tbsp of salt and mix the ingredients together.


Then, layout the fries in a single layer on a baking sheet.


Put them in the oven and check in on them until they are a light brown.


When they are, take them out of the oven and cover them with the cheese. After they are coated, put them back in the oven until they are dark and crispy. {This is a longer process than the recipe says}


When they are done, pop them out, sprinkle some italian seasoning, and.....
